Cut your dough into 12 pieces by cutting the dough in half, cutting each half in half, and then cutting each quarter into 3 pieces. Roll each piece out and tie it into a knot. Let them rest on a floured surface for at least 5 minutes. Line a baking sheet with parchment paper and drizzle some olive oil. Place each piece of dough onto the sheet tray. Drizzle with some more olive oil over the top. Bake them for 10 minutes, flip them over to brown the other side, and bake for 5 more minutes. While your dough is baking, place butter, olive oil, garlic and parsley in a pot. On a low simmer, melt the butter and cook the garlic just until it is fragrant. Turn off the heat and pour it into a bowl - preferably one that has a lid. Once the knots are done, place them into the bowl with the garlic butter immediately. Pour over grated Parmesan cheese and cover. Shake up until each knot is evenly coated.
